Queen Professional Named Finalist for FSAA Innovation of the Year Award 2025

Queen Professional is proud to share that our Mirror Glaze range has been selected as a finalist for the FSAA Innovation of the Year Award. This recognition is a meaningful milestone for our team and a reflection of the product’s impact across hospitality businesses in Australia and New Zealand.

The Mirror Glaze range was developed in response to a clear and persistent challenge within foodservice: the need for a dessert glaze solution that delivers high-end presentation without the complexity, cost, or labour intensity traditionally associated with mirror glazes. Our team worked closely with pastry chefs and foodservice professionals to create a product that integrates seamlessly into real-world workflows—whether in patisseries, cafes, industrial bakeries, or high-volume kitchens.

This range offers ambient, ready-to-use glazes that require no heating or cooling and can be customised with Queen Professional’s bulk flavour and colour systems. It is freeze-thaw stable, suitable for chilled display up to five days, and certified gluten-free, vegan, halal, and kosher. These features allow businesses to produce bulk decor and dessert finishes with speed, consistency, and minimal waste—without compromising on quality or creativity.

The Mirror Glaze range includes Neutral, Glamour, and White variants, each designed to support a wide variety of applications including mousse cakes, layered desserts, bavarois, parfaits, semifreddo, and select cake formats. It is a product born from listening to the needs of industry and responding with a solution that is both practical and inspiring.

Being a finalist by FSAA is a humbling moment for our team. The judging criteria—spanning operational efficiency, commercial viability, innovation, sustainability, and presentation—reflect the values we hold in product development.
